My “Go-To” Chocolate Chip Cookies

So, here we are…8 weeks or so into this socially-distanced quarantine. My days have swung the pendulum from excessive productivity and positive to utterly lazy and grumpy – and every point in between. Lately, I feel like my family is gravitating toward needing comfort (specifically, comfort food). To that end, I made chocolate cookies. Is there anything more comforting that chocolate chip cookies straight from the oven?

Here’s a video of the cookie process:

And…the recipe:

3/4 cup butter, softened

3/4 cup granulated sugar

3/4 cup dark brown sugar

2 large eggs

1 1/2 tsp vanilla extract

2 1/4 cup all purpose flour

1/4 cup malt powder (optional)

1 tsp baking soda

1 tsp salt

1 package semi-sweet chocolate chip cookies

-oven to 350 degrees

-beat butter and sugars until creamy

-add eggs and vanilla; beat at medium for about 3 minutes until fluffy

-add flour, salt, baking soda, and malted milk powder; beat on low speed until just combined

-add chocolate chips; stir until just combined

– either scoop out into cookies and bake for 10-12 minutes OR spread about 1/2 of the dough into a cast iron skillet and bake for about 25 minutes (check often, the time will depend on the size of your skillet, etc)

These are my “go-to” cookies whenever we need a quick sweet or for taking to a friend or sending to a party or any of the this and sundry reasons cookies are needed. I hope that your family and friends enjoy this little taste of comfort.

With love, 6 feet away 😉
